By adding small amounts (3% of the rice’s pre cooked weight) of lipids (in the test case they used coconut oil) to the boiling water prior to adding the rice, then cooling the rice immediately afterwards for 12 hours, a reduction of 10% to 60% of calories was found. The wide range is due to different types of rice strains being tested. The reduction remained even after the rice was reheated.
